CARNE DE PORCO A ALENTEJANA

Today, all of a sudden, i was craving for the pork stew that i had in Lisbon on Oct 12, 2023. During the Lisbon’s city walking tour, the guide recommended few dishes & restaurants. I chose this dish and i had it at “Casa Do Alentejo” restaurant.

As i was a solo traveller, i was able to secure a small corner table without reservation at this bustling busy restaurant. I still remember the taste of the dish. It was a tangy braised pork with clams served hot with crispy fried potatoes. I enjoyed the dish with a very cold non alcoholic beer. Lisbon was hot and humid even in mid October. Nice memories!

Feb 23rd 2024 – I am creating the same dish. Kind of…Found pork loin cubes on sale (50% off) for $5 and since the fresh clams were expensive ($8 for 350 grams with shell on), i settled for canned ones. The flavor of fresh clams is unbeatable. Bought a bottle of cono Sur Sauvignon Blanc that was on sale for $17 as well.

Marinated the pork for few hours with spices and braised it with white wine. Added the clam meat from the can. Fresh clams would have been much better. i will make this dish with fresh clams when its reasonably priced. Cubed the potatoes, parboiled and air fried them until it was crispy. I kept them on side and added to the stew just before plating to maintain the crispiness of the potato. Really enjoyed the dish, especially the tanginess from the sauvignon blanc.
